Baking Mix

I’ve tried a lot of different recipes for a homemade baking mix like Bisquik. A lot of them just didn’t work – too greasy, too… just not right. This one works! And works really well. I store mine in a cool dry area of my pantry, but if you don’t use it often, I would think about storing it in the fridge or freezer.

Baking Mix

8 cups flour

2 tsp. salt

⅔ cup dry milk powder

1 cup shortening or lard

⅓ cup baking powder

Mix all dry ingredients.  Cut in shortening or lard.  You can use a mixer set on low to save time.  Store in an airtight container for up to 6 months.  A five pound bag of flour makes a double batch of this.

Baking Mix Biscuits

2 ¼ cup baking mix

⅔ cup water or milk

Mix lightly until dough forms a ball.  Turn out onto a lightly floured surface and knead 10-12 times.  Roll dough ½ inch thick and cut out.  Do not reroll dough more than twice.  Bake at 450* for 10-12 minutes on an ungreased cookie sheet.

Baking Mix Pancakes

2 ¼ cups baking mix

1 ½ cups water

¼ cup sugar

2 tblsp oil

1 egg

Mix all ingredients until moist.  Batter should be lumpy.  Cook on a heated griddle until bubbles appear on the edge and edge looks dry.  Flip and cook until done. 

Baking Mix Muffins

2 ¼ cups baking mix

¾ cup water

¼ cup sugar

⅓ cup oil

1 egg

Mix baking mix and sugar.  Add egg, water and oil to dry ingredients.  Mix only enough to moisten flour.  Batter will be lumpy.  Fill greased muffin tins two-thirds full.  Bake at 400* for 20 minutes.  Can fill tins half-way, then add a spoon of jelly.  Top with more batter.  Can add raisins, nuts, chocolate chips, etc.

This baking mix will substitute for Bisquik in any of their recipes (and there are a LOT), and it’s a lot cheaper to make than to buy.
